Spicy Jerk BLT

Ingredients

For the Jerk Maple Bacon
● 3 slices thick-cut bacon
● 1 tbsp Ting-A-Ling Jerk Marinade
● 2 tsp pure maple syrup
● 1 tsp brown sugar


For the Jerk Mayo
● 2 tbsp mayonnaise of choice
● 1 tbsp Ting-A-Ling Jerk Sauce


For the Jerk Maple Vinaigrette
● 1 tbsp Ting-A-Ling Jerk Sauce
● 1 tbsp olive oil
● 1 tsp garlic vinegar
● 1 tsp ginger vinegar
● 1 tsp pure maple syrup
● Pinch of salt
● Freshly ground black pepper, to taste


For the Sandwich
● 2 slices sourdough bread
● 1 small ripe vine tomato, sliced
● 2–3 leaves crisp lettuce
● Salt or seasoning of choice, to taste

Jerk BLT 

The combination of Ting-A-Ling Jerk Marinade and Jerk Sauce brings warm Caribbean spice to every layer of the classic BLT, while maple syrup and brown sugar caramelize the thick-cut bacon for a sweet, smoky, spicy finish.

1. Season the tomatoes.
Slice the vine tomato and season lightly with salt or your seasoning of choice. Set aside
while you prepare the remaining ingredients. This gives the tomatoes time to release
some of their juices and develop more flavor.

2. Marinate the bacon.
In a small bowl, combine 1 tablespoon Ting-A-Ling Jerk Marinade, 2 teaspoons
maple syrup, and 1 teaspoon brown sugar. Add 3 slices thick-cut bacon and toss
until evenly coated. Set aside to marinate while you prepare the sauces.

3. Make the jerk mayo.
Stir together 2 tablespoons mayonnaise and 1 tablespoon Ting-A-Ling Jerk Sauce
until smooth. This keeps the jerk mayo at a 2:1 mayo-to-jerk-sauce ratio. Set aside.

4. Make the jerk maple vinaigrette.
Whisk together 1 tablespoon Ting-A-Ling Jerk Sauce, 1 tablespoon olive oil, 1
teaspoon garlic vinegar, 1 teaspoon ginger vinegar, and 1 teaspoon maple syrup.
Season with a pinch of salt and freshly ground black pepper. Whisk until emulsified, then
set aside.

5. Toast the sourdough.
Spread a thin layer of the prepared jerk mayo over 2 slices of sourdough. Toast in a
skillet over medium heat until golden and crisp. Remove from the skillet and set aside.

6. Cook the jerk maple bacon.
In the same skillet, add the marinated bacon and cook over medium to medium-low heat,
turning as needed, until caramelized and crisp. Because of the maple syrup and brown
sugar, keep an eye on the heat to prevent the glaze from burning. Transfer the bacon to
a plate.

7. Dress the lettuce.
Lightly toss 2–3 lettuce leaves with a small spoonful of the jerk maple vinaigrette, just
enough to coat.

8. Assemble the BLT.
Spread additional jerk mayo onto the toasted sourdough. Layer with the dressed lettuce,
seasoned tomato slices, and jerk maple bacon. Add another layer of tomato and bacon,
then finish with the second slice of toasted sourdough.

9. Serve.
Slice in half and serve immediately, with extra jerk maple vinaigrette or jerk mayo on the
side if desired.
