Sweet & Savory Plantain Bacon Jam

Sweet, smoky, savory, and spicy, this Plantain Bacon Jam puts a Caribbean-inspired spin on the
classic. Sweet plantains are fried in rendered bacon fat, then combined with crispy bacon,
caramelized onion, maple syrup, brown sugar, and Ting A Ling Jerk Sauce for a rich, sticky
spread with the perfect balance of sweet heat.

Instructions:
1. Cook the bacon.
Chop the bacon into small pieces and add to a skillet over medium heat. Cook until
browned and crisp. Remove the bacon from the skillet and set aside, reserving the
rendered bacon grease in the pan.

2. Fry the plantain.
Peel the plantain and slice it into rounds. Add the plantain slices directly to the skillet with
the reserved bacon grease. Fry on both sides until golden brown and caramelized.
Remove from the skillet and allow to cool. Once cooled, dice the fried plantain into small
pieces and set aside.

3. Cook the onion.
Add the diced yellow onion to the same skillet and cook over medium-low heat until
softened and lightly caramelized.

4. Build the jam.
Reduce the heat to low. Add the brown sugar, maple syrup, Ting A Ling Jerk Sauce, and
apple cider vinegar. Stir until the brown sugar dissolves and the mixture becomes glossy
and slightly thickened.

5. Bring it all together.
Return the crispy bacon and diced fried plantain to the skillet. Stir gently until everything
is evenly coated in the sweet and spicy jerk mixture.

6. Cook until jammy.
Continue cooking over low heat, stirring occasionally, until the mixture is thick, sticky,
and jam-like. Keep some of the plantain pieces intact to give the finished jam plenty of
texture.

7. Cool and serve.
Remove from the heat and allow the plantain bacon jam to cool slightly. The mixture will
continue to thicken as it cools.

How to Serve:
Spoon it onto burgers, breakfast sandwiches, grilled meats, or toasted bread, or add it to a
cheese and charcuterie spread. The combination of caramelized plantain, smoky bacon, and
